Form the ground beef into a loose patty, slightly larger than your bun—it will shrink during cooking. Season generously with salt and pepper on both sides. Let it rest at room temperature for 10 minutes.
In a cast iron skillet over high heat, cook the bacon until crispy, about 4-5 minutes per side. Set aside on a paper towel-lined plate. Reserve the bacon fat in the pan.
In the same pan with the bacon fat, sear the burger patty over high heat. Don't touch it for 4 minutes—let that crust develop. Flip once and cook for another 3 minutes for medium.
Add the cheese in the last minute of cooking and cover the pan to melt. The cheese should be gooey and draped over the edges of the patty.
Toast your brioche bun in a separate pan with a bit of butter until golden brown. This creates a barrier that prevents the bun from getting soggy.
Build your burger: bottom bun, secret sauce, lettuce, patty with cheese, bacon strips crossed, caramelized onions, pickles, tomato, more sauce, and top bun. Secure with a pick if needed.
